Chef Adam Jess came to Copper in 1998 after training with Colorado Mountain College’s Culinary School.
His trademark is blending regional cuisine with world flavors, but there is nothing pretentious about this chef or the CB Grille. Jess, grew up in Lincoln, Nebraska and egan his restaurant career washing dishes at age 15. His culinary apprenticeship included six-month internships at various restaurants where he saw “ the good, the bad, and the ugly”. Jess said he learned early on how he wanted his restaurant to be run.
Today, he keeps up on trends throughout the world through classes at the Culinary Institute of America.
